Carol Jensen

Springville

Carol Simonson Jensen, Beloved Wife, Mother, Grandmother, Sister, and Friend passed away October 10th 2024, at her home in Springville, Utah. Carol was born March 10th, 1950, to Jack and Leigh Taylor Simonson in Provo, Utah. She was raised in Springville, where she attended Elementary, Junior High, and Springville High School. She was a member of the Pep Team, served as a Student Body Officer, participated in band, and she excelled in her homemaking classes. Through those classes Carol became an excellent seamstress, she loved designing and making clothing. She was active in girls’ athletics, having a very competitive spirit, she played all athletics that were available. She graduated from Springville High – Class of 1968. Following High School, she worked as a bank teller at Central Bank. It was while working at the bank she met a recently returned missionary, a lovestruck patron, by the name of Karl Jensen.

Carol married Karl in the Manti Temple on November 20th, 1970. The greatest adventure of her life then began as she became the mother of 8 children. She spent every waking moment teaching, nurturing, guiding and loving her 5 daughters: Kelly, Audrey, Robyn, Arielle and Mariah; and her 3 boys: Adam, Andrew, and Aaron. She would often express being a mother brought her the greatest joy and satisfaction of her life. She was a devout member of the Church of Jesus Christ of Latter-Day Saints. Carol firmly believed in the teachings of Jesus Christ and the Atonement. She was stalwart in her belief and her faith in the eternal family. She dedicated herself to a life of compassion and service (especially to children and other souls in need). On top of serving her own family she would often nurture and care for others with whom she felt needed a little extra love, this was evidenced by the many college students that were brought home on holidays and weekend to enjoy her famous stacks of Pancakes, and mounds of Rolls. She learned these skills at a young age and was taught by her mother Leigh Taylor Simonson Gardner who was an inspired homemaker.

Carol was a fighter and survivor, having lost her father at the age of 11, this gave her a better understanding for the needs of others. She always tried to serve and help those she connected with. She was the definition of the word Charity. Throughout her life she worked various jobs making lifelong friends. Carol especially enjoyed the Christmas Season, at the family-owned Tree lot. She would spend her time inquiring about her customer’s and their families, having a knack for knowing “what tree fit the family”. She enjoyed sharing her homemade wreaths/reefs and hats with anyone.

Throughout her life she showed tremendous strength and dedication to the service of her fellow man. Leading as Cub Scout Master, Primary Teacher, Nursery worker and multiple callings usually involving children. Carol would do everything she could to attend many sporting events at the same time.

Carol was diagnosed with Stage IV breast cancer in 2014 and has put up a courageous and valiant battle throughout the last ten years. The family would like to thank the many angelic ward members, friends, hospice, healthcare workers, community members, and especially Dr. Wallentine and the many diligent nurses and staff who provided comfort and cared for our wife, mother and grandmother.  

Carol is preceded in death by her mother, father, her daughter Mariah and her son Andrew. We are certain that there was a tremendous celebration returning to the arms of her heavenly father. She is survived by her husband Karl Jensen, Springville UT, Son Adam Jensen (Sherri), Daughter Kelly Schoppe (Joe), Daughter Audrey Wilson, Daughter Robyn Jensen, Son Aaron Jensen (Jennifer), Arielle Young (Alex) and grandchildren. She was also survived by her Sister Elene Simonson, Brother Paul Simonson (Ava), Brother David Simonson (Susan), and Sister Joy Franks (Matt).

Funeral service will be held on Saturday October 12th at 11 a.m. at the church located at 55 North Main in Springville, Utah. A viewing will take place prior to the funeral from 9:30 a.m. – 10:30 a.m. There will also be a viewing held from 6:00 p.m. – 8:00 p.m. on October 11th at Wheeler Mortuary Located at 211 East 200 South Springville Utah.

The family would also like to especially thank Joe Schoppe in providing the beautiful, hand crafted, casket for our beloved Carol.
